Heat grill pan to high. Season with Salt and pepper and drizzle with oil. Cook 3 to 4 minutes on each side and transfer to a foil covered platter to hold. If you are using a grill pan, cook chicken in 2 batches if necessary. Place a medium potato on stove over medium heat. Add 2 tablespoons oil. Add garlic, pepper flakes, and onions. Cook 10 minutes stirring often. Add tomatoes and heat through for 2 minutes. Add basil and salt and pepper. Layer chicken with sauce in a casserole dish. Top with Parmigiano and mozzarella. Brown casserole.
