In a skillet, heat olive oil. Cook onion and garlic in oil until tender. Add the chicken and heat three minutes. Remove from pan and place in a bowl.
Heat tortillas according to package directions. Divide chicken onto center of tortillas; top with cheese and optional ingredients, if desired.
Fold tortillas in half. Melt margarine or Smart Balance in same skillet. Grill tacos on each side for two to three minutes or until cheese melts.
