This dish tastes like summer!
1. Mix salsa ingredients together. Let sit at least one hour, but tastes much better if you give the flavors time to combine overnight.
2. Mix chicken marinade ingredients, marinade chicken for at least an hour, or overnight.
3. Grill chicken on the BBQ or under the broiler on high in the oven. 7-10 mins each side depending on thickness of the chicken.
Adapted from Cooking Light.
Can use dried spices in the chicken marinade, but use fresh for the salsa. This salsa is fantastic on just about anything - salads, crackers, meats, chips, etc.
