1. Steam diced sweet potatoes for 10-15 minutes
2. Mash while hot
3. Add spinach, salt, pepper, and olive oil, and stir well.
4. Fry cod until cooked through (about 5 minutes on each side)
5. Place fish on top of sweet potato mash and serve
