Grilled corn on the cob with maple lime butter
For the corn:
Rub each ear of corn with 1 teaspoon of butter. Season each ear with a pinch of salt and a few grinds of pepper.
Arrange each ear on a piece of foil. Add a few sprigs of thyme. Then roll the corn up in the foil and twist the ends tight.
For the maple-lime butter:
Butter should be very soft and maple syrup should be warmed - this will help in mixing the two. In a small bowl, mix the butter, lime zest and a pinch of salt. Add warm syrup and mix well.
Grill the corn directly over hot coals for about 20 minutes. Give the corn a quarter turn about every 5 or 6 minutes.
Serve corn with maple lime butter on the side.
