Lite Catfish Tacos
While grill is heating: make dressing by dissolving sugar in lime juice and whisking in mayo and yogurt. Salt and pepper to taste
Mix dressing with Cole Slaw vegetables to wilt slightly.
Season fish fillet with Old Bay or blackened seafood seasoning, salt & pepper.
Warm corn tortillas on a comal or griddle or wrap in foil and put on the warming rack of the grill
Grill fish until done. Break into strips.
Build tacos by filling tortillas with fish, cole slaw, cheese and salsa.
