Preheat your grill to medium-high.
Combine eggs, milk and vanilla and beat until frothy. I use my blender for this step.
Pour eggs into a shallow dish (pie plate etc.). Dip bread slices in egg until both sides are coated.
Clean grill well and grease.
Place pieces of coated bread on grill and cook until one side is lightly browned. This doesn't take long so don't leave it unattended. Flip and cook other side. Remove to plate.
Serve. We use butter and real maple syrup or fresh fruit.
