1. Toss pork and salt together in a large bowl and let site for 20 minutes.
2. Whisk five-spice powder, garlic powder and corn starch together in a bowl. Add hoisin sauce and stir to combine. set aside 1 1/2 tablespoons of hoisin mixture.
3. Add pork to hoisin sauce and toss to coat. thread pork into 6 12-inch metal skewers, leaving 1/4-inch between pieces. Spray both sides of meat generously with oil spray.
4. Grill until the internal temperature of the meat reaches 140 degrees and the edges are charred. Spread remaining hoisin suace on meat for the last 2-3 minutes of grilling. Serve with sliced scallions.
