Adapted from "Barbecue" by Treuille & Erath, p. 73.
Cut lobsters/crayfish in half, and take out intestines.
Put butter into area of intestines.
Grill lobster/crayfish on gas grill with shell down, until almost done.
With brush, put melted butter over meat.
When almost done, turn lobsters/crayfish over, and grill for 1 min over very high flames.
Serve with lemon wedges.
Make sure that the flaming butter seals the meat once turned over, and chars the meat a little.
Serve with Prawns with Salsa Fresca as side dish.
