A tasty Mahi Mahi dish.
Mix all salsa ingredients into a bowl and stir. Set aside to let flavors marinate while you grill the fish.
Drizzle olive oil and juice from limes over both sides of all 8 Mahi Mahi fillets. Sprinkle with salt and pepper. Grill fillets on medium high heat for about 8 minutes or until the bottom half begins to look opaque. Turn over and grill for about another 6 to 7 minutes on the 2nd side. The top flesh should begin to flake when ready.
