Preheat Oven to 180C
Place griddle pan on high heat.
When hot, cook peaches cut side down for 3 mins.
Remove place Cut side up on baking tray.
Sprinkle over thyme and 1 cube butter
Bake 5 mins
Mix with sugar & zest
Remove peaches from oven
Sprinkle ove biscuit mix
Pour Brandy into tray around the peaches
Cook for 5 mins more until peaches soften and caramelise
Serve with creme fraiche or vanilla ice cream.
