Healthier alternative to Cheesecake

In medium sized mixing bowl, combine the cream cheese, egg yolk, vanilla, 3-4* T of sugar (taste after 3rd T. to determine if you would like it sweeter. I use only 3 T.) and pinch of salt. Beat with electric mixer on high until fully blended and creamy. (At this point you may add any other flavoring you would like, i.e. almond extract, Amaretto Licquor, Kirch, Grand Mariner, freshly grated lemon or orange zest, freshly ground/grated nutmeg - etc.). Set aside. This filling can be made 2-3 days ahead. Hold in the refrigerator until ready to bake peaches.
Combine 2 T. sugar with cinnamon.
Preheat a grill or Panini Press on High. Use only the bottom side of the Panini Press - DO NOT CLOSE THE LID! Spray a 9 x 13 baking dish with spray oil. Set aside.
Peel, halve, and pit the peaches. Cut a thin slice off the bottom of each peach half (eat that!) - this will keep the peaches from rolling in the baking dish when put into the oven.
Either dip each peach half or brush each peach half in/with the melted butter. Place the "pit side" down on the grill /press- grill long enough to leave grill marks and soften the fruit.
When all peaches are grilled, arrange in the bottom of the sprayed baking dish "pit side" up, cut bottom side down. Sprinkle all of the peaches with the cinnamon/sugar blend. At this point the peaches may remain in the baking until ready to serve - not longer than a day or the peaches will start to get mushy. These may be made the morning of serving and refrigerated, however, leave the filling out until just ready to bake.
When ready to bake, preheat oven to 350 F. Drop spoon full of cheesecake filling into each peach half center.
Bake until peaches are softened but still hold their shape and filling is just beginning to turn golden brown - 30-35 minutes.
Using a Panini Press makes sure that there is no other food flavor transfer to the peaches. If Panini Press is used - remember to "grill" on the bottom half of the press only- Closing the lid with smash the peaches.
