Prepare the onions, garlic, peach/ nectarine, and sage
Heat the olive oil in a pan over a medium heat and add onions
Fry until soft and slightly brown
Rub the chops with a little seasoning and cook under a hot grill or in a frying pan turning Occasionally
Timing will vary depending on thickness but they need at least 20 minutes
Add the rest of the sauce ingredients to the onions
Cook for about five minutes until the peach has softened
