Combine all the ingredients for the mojo and blend until smooth.
Marinate the fish for 10 minutes.
Grill the fish until golden brown and slightly charred until medium, brushing with the remaining mojo. Remove from the grill and let rest for 5 minutes.
Serve the snapper garnished with fresh thyme and grilled grapefruit wedges.
