A splash of citrus juice and a sprinkle of zest bring out the best in flavorful grilled salmon and fresh asparagus.
Place salmon in large freezer-weight reclosable plastic bag. Add lemon peel and juice, oil, thyme, and pepper; seal bag and turn to coat fish. Place bag on plate and marinate in refrigerator for at least 15 minutes or up to 1 hour. Remove Salmon from bag; discard marinade.
Place salmon flesh-side down on oiled grid over medium high heat; cover and grill for 4 minutes. Place sheet of heavy-duty foil on grid; turn salmon skin-side down on top of foil. Cover and grill until salmon is just opaque throughout and internal temp is 145, about 4-5 minutes. Slide metal spatula between flesh and skin. (Skin will stick to foil; discard foil.) Serve over Lemon Asparagus.
Lemon Asparagus:
Snap off and discard tough ends of asparagus. Pour 1 inch water into large deep skillet or dutch over; bring to a boil over high heat. Place steamer basket over water; add asparagus spears. Reduce heat, cover and steam until crisp-tender, about 5 minutes.
Arrange asparagus on serving platter. Drizzle lemon juice and butter over asparagus. Sprinkle lemon peel, thyme, salt and pepper over top.
