1) Brush onions with 1 tbl. olive oil and sprinkle with 1/4 tsp. salt. Grill onions and sausages, covered, over medium-high heat for 8-10 minutes or until onions are tender and sausages are heated through, turning once. Remove from grill and keep warm. Place hoagie rolls on grill, cut side down, 2-3 minutes until toasted.
2) In a large bowl, combine spinach, grilled onion, balsamic vinegar, herb, 1 tbl. olive oil, and 1/4 tsp. black pepper. Toss to combine.
3) Spread goat cheese on hoagies. Top sausages with onion mixture.
