In a small bowl add honey, shallots, vinegar, salt and pepper. Gradually whisk in extra virgin olive oil. Taste test, you might have to add honey or salt depending on your liking. Finally add chopped chives.
Mix all salad ingredients except for apricots and cheese. Combine salad mixture and fig balsamic vinaigrette. Garnish with feta cheese and dried apricots.
