Preheat wok to medium-high. Add olive oil (additional to the 3 tablespoon used for sauce) and heat up.
Heat butter and oil in a saucepan over medium for the piri piri sauce.
Add garlic, ginger, pepper flakes, hot sauce, zest, paprika and salt.
Simmer sauce to cook the garlic & combine all the flavours, 3-4 minutes.
Add lemon juice; simmer 2-3 minutes more.
Toss shrimp with 0.25 cup of the sauce in a bowl.
Grill shrimp, covered, until they turn pink and firm, 1-2 minutes per side (very quick).
Remove shrimp from the grill; toss with remaining sauce immediately. This way, the shrimp will absorb the sauce.
