Grilled steak of any kind. Sirloin is a cheaper cut, Prime Rib is more expensive, Look for thicker steaks that have marbling (google it :) )
1. Take Steaks out of refrigerator at least 30 minutes before cooking to warm towards room temperature
2. Turn 2 "outside" grill burners on to about "50%" (right at medium/halfway on the dial). You want a temperature of about 400.
3. Dry Steaks off with paper towel
5. Sprinkle Steaks with favorite spices (careful on salt, you can always add more later)
6. Once grill is preheated, place Steaks in center of grill (not over active burners)
*** Ideal final internal temp for medium rare will be about 135-140 ***
*** Knowing when to flip steaks is tricky. Timing will vary based on cut / thickness of steak
*** If steak is sticking to grill, it hasn't cooked enough and it shouldn't be flipped. Let it stay until it's "released"
7. Flip Steaks when internal temperature is about 100
8. Once steaks get to about 130 internal temperature , flip them back and forth directly over a burner to sear. This should only take 1-2 minutes on each side
9. Once sear is achieved take off and place butter on each steak and let sit for a few minutes
NOTE: You can also sear first (versus last) .
