Preheat oven to 400. Spray 12 muffin cups with nonstick baking spray with flour. Set aside.
In a large bowl, combine flour, grits, baking powder, baking soda, and salt; stir well. In a medium bowl, combine sour cream, butter, honey, and eggs; stir well. Pour egg mixture into flour mixture; stir until just moistened.
Divide batter evenly among prepared muffin cups.
Bake until a wooden pick inserted in the center of muffins comes out clean, approximately 15 minutes. Let muffins cool in pans for 5 minutes. Remove from pans, and let cool completely on a wire rack. Serve with honey.
