Can be done ahead:
Heat olive oil in a skillet over medium-high heat. Add ground beef and sprinkle with cumin, chili powder, smoked paprika, salt and pepper. Cook, breaking up with a wooden spoon until browned and cooked through, about 8 minutes.
Meanwhile, cut cherry tomatoes in half. Slice green onion.
At lunch time:
Toss lettuce with cilantro lime vinaigrette.
Place lettuce and cherry tomatoes in a bowl. Top with ground beef, guacamole, green onion, cheese and cilantro.
Drizzle creamy chipotle dressing on top of the salad.
