Suggest a better descriptionFry and break up ground beef; set aside.
Saute/Sweat onions and pasilla in EVOO and butter for 2-3 min. Add rice and cook until rice is coated and a little browned. Add garlic and pepper flakes and cook for 1 min.
Add white wine and cook until absorbed. Add tomatoes. Add beef stock in 1/2 cup increments until rice is al dente.
Add escarole and cook until wilted. Taste; add salt and pepper. Add basil and serve with parmesan cheese.
More herbs could be added to customize.
