Grill the chile on a comal or in a heavy skillet or even over the open flame of your gas stove to blacken the skin. Once blackened place the chile in a paper bag to sweat a bit. In the meantime get the other ingredients ready. After a few minutes remove the chile and peel off the blackened skin. Remove stem, seeds and veins (you can leave a few seeds in if you want it very spicy) . Now, in a molcajete grind the garlic, cilantro, salt, chile and lime juice until smooth. Add the avacado and mix. Add the tomatoes and onion. Adjust with salt.
A molcajete is a pre-hispanic kitchen tool made from volcanic rock that is used as a mortar and pestle. Anything ground in a molcajete has a very distinct texture.
Of course you can make this without using a molcajete in a regular mortar and pestle or even the blender. If using a blender just be sure to add the avacado and tomatoes after you whirl.
