Guacamole in tortilla
Pre heat oven to 400 F
Cut each Roma in half, squeeze out juice and dice. Place in medium bowl with mashed avocado, shallots, garlic, lemon juice, Worcestershire sauce, hot sauce and cilantro. Mix well, add salt if required. Set aside.
Cut circles from the tortillas using a 3 inch cookie cutter. 3 per tortilla. Oil one side and lay oiled side down, place 1 tblsp guacamole mix down the middle and tightly roll into cigar shape. PLace the seam side down on cookie sheet, keeping rolls together to prevent them from opening.
Bake in pre heated oven 400 F for about 8 minutes, turn over and bake for another 2 minutes or until crisp. Let cool and serve with salsa
