cook like you would gumbo. adjust seasoning to your likes. put the bay leaf & pickling spice in a cheese cloth bag and remove at the end. Put shellfish in at the very end. You can make it without the seafood and freeze. Then reheat and add the seafood. You can omit the chicken if you want it to be a seafood gumbo or omit the seafood if you want a chicken and sausage gumbo. Serve with cooked rice.
