Sauté the veggies in olive oil
Slightly brown the chicken and sausage, do not over cook. If using chicken, cook chicken before veggies. Cook in cast iron skillet.
Combine chicken, sausages, veggies and broth
Make rue in hot cast iron skillet. Heat olive oil and add flour. Start to brown and then add some broth for flavor. After rue is browned. Stir into pot.
Add seafood last. Gumbo ready when shrimp is pink and chicken is white. Let simmer for 10-15 mins before serving.
