Heat oil and flour in large pan on medium heat. Continuously stir and allow to become a peanut butter color, don't burn, takes 10-15min
1. Add onions, bell pepper, and celery to the roux and let cool 8-10 min until veggies are soft. Stir occasionally so it doesn't burn
2. Add the sausage and garlic, cook 1-2 more minutes
3. Add Cajun seasoning, chicken broth, tomatoes, and bring to a simmer. Cover and let cook 15-20 minutes
4. Add the shrimp and simmer for about 10-15 minutes
5. Serve over rice
