Lightly brown chicken in a large pan. Add in vegetables and allow onions to sweat.
Stir in garlic and sausage. Season with Cajun seasoning, pepper, and bay leaf.
Add tomatoes and chicken broth. Bring to a boil, then simmer on low for about 1 hr.
In the last 10 min. of cooking, add shrimp. Finish when shrimp is thoroughly pink.
Season to taste. Stir in green onions, reserving some for garnish. Add Tabasco to taste.
Mix in approx. 1 tb. of filé powder, depending on desired thickness.
Serve over Basmati rice.
If using chicken consome, follow the instructions on the bottle, but only add half the water.
