Peel Shrimp. Add seasoning to shrimp and set aside. Make broth with peels. Bring to a quart with chicken stock.
Heat oil over medium heat. Brown sausage and remove.
Whisk in 1/2 cup flour. Lower heat and stir for about 30 minutes until the color of an old penny
Stir in 2 tbs of flour and cook one more minute
Add celery, onion, green pepper and pinch or two of salt. Cook until soft.
Add garlic cook one more minute
Add broth, tomato, tomato paste, and herbs. Bring to simmer
Cook 20 minutes
Add okra bring to simmer
Cook 10 minutes
Add shrimp and cook 5 minutes.
Serve with Rice and green onion
