Suggest a better descriptionFill 1/3 pot with water. Add roux powder till it is dark brown. Bring to boil – watch for boiling over. Boil approximately 15 minutes. Add cut up sausage, onions, garlic and seasoning. Onions and garlic can be added later.
Then boil chicken in the roux for 1 1/2 hours. Take out chicken and de-bone - add back to pot.
