Roasted Red Pepper Relish - Heat oil in a large skillet over medium heat and add peppers. Saute. Add onions, garlic and cook until onions are tender - about 5 minutes. Mix vinegar and sugar - stir into peppers. Continue collking nitl all liquid is evaporated - about 5 minutes. Cool. Can be prepared one day ahead.
