Purée peppers with one cup cider vinegar (be careful Strong fumes!). Combine purée, the remaining cup vinegar and sugar in large saucepan. Bring to boil and boil for 10 minutes, stirring constantly.
Stir in pectin and stir while boiling hard for 1 minute.
Remove from stove and remove foam if necessary. Add food coloring til eye appealing.
Label into clean jars and process for 10 minutes.
Makes 7 -1/2 pints - we did half recipe and made 3 half-pint jars.
