Prepare all ingredients:
Chop all peppers to make 2.5 Cups
Chop all onions to make 2 Cups
Peal and chop garlic
In stock pot 4 cups water on med heat(i like to simmer) Add peppers, onion, garlic, salt and pepper and cook down till water is almost gone
Use a smaller pot; Cook Plum's with water on medium high head till soft and liquid is one (remember smaller pot will do you need all the liquid)
Turn off heat, and let cool to room temperature
In blender(I use a ninja pro with multi stacked blade) add stock pot Ingredients, with plum's, along vinegar blend till smooth
This will Yield about 2-3 cups depending how much you cooked down and size of fruit added
