Put the oil in a large frying pan over a medium heat. Add the shallots and cook for 2-3 minutes. Add the chorizo and cook for 3 minutes until the red juices just begin to flow from the red sausage. Tip this mixture from the pan into a bowl and set aside.
Season the haddock fillets with salt and pepper, put a little more olive oil in the pan (you can use some of the juice from the chorizo mix for extra flavour if you want) Then put them in the pan and cook for about 3 minutes.
Add the can of tomatoes, sugar, beans and thyme and mix it all up being careful not to break up the fish but making sure the fish are all covered with the mixture. Tip the shallot and chorizo mix on top.
Pop a lid on top of the frying pan. If you do not have a lid for your frying pan, then put a baking tray on top. Cook for around 7 minutes. Of course this cooking time depends largely on how big your fish fillets are, so check after 5 minutes. The fish should be soft, shiny and not dry. A minute or so before the fish is ready sprinkle over a pinch of lemon zest.
Once the fish is ready remove the pan from the heat and serve on a pre-warmed plate with the beans at the base and the fish piled high on top.
Serve with a crisp dry French white wine and big chunks of bread to soak up the spicy tomato juice.
As an alternative serve with naan bread or couscous.
