Preheat the oven to 200°C (circulating air).
Wash the potatoes and cut them into wedges (1/8- 1/16 depending on size), then place them int a bowl. Add 1 1/2 tbsp olive oil, and salt & pepper to your liking. Mix them well and place them on a baking tray with a baking sheet. Insert the tray in the oven an bake for 30 minutes, turning them once or twice.
Combine 40g bread crumbs with 30g grated parmesan in a small bowl, and add salt & pepper to your liking.
In a pot (large enough to hold the fresh baby spinach) combine 300g cream, 2 tsp of vegetable broth powder, and 75 ml water. Add salt & pepper to your liking, and bring to a simmer. Add the 100g baby spinach and take off the heat. Mix and let the spinach wilt.
Around the 15 minute mark of baking the potatoes, pour the spinach cream into a baking tray. Place the hake filet on top and sprinkle with the bread crumb and cheese mix. Place in the oven and bake for 12-15 minutes (until the fish is cooked and the breadcrumbs are golden brown).
