In a 5 qt Dutch oven make a golden roux over med-high heat with oil and millet (5-7 minutes)
Stir in bell peppers, onions, garlic, and Oregano season with salt and pepper and cook until crisp-tender - stirring occasionally (10 -12 minutes)
Add 4 cups of water, stir in okra and sausage - bring to a boil-Stir in shredded chicken and warm through - 5 minutes
Serve with Corn Bread
