This simple recipe is half whole wheat, half regular bread flour (I always use King Arthur flour). It is an adapted version of a recipe (Amish white bread) I found online - which is wonderful. It requires very little prep (unless you're kneading by hand) and a lot of waiting for the dough to rise.
Place water in bowl of standing mixer (or regular mixing bowl). Add sugar and honey and stir until dissolved. Add yeast and let sit a few minutes to proof. Meanwhile, combine flours and powdered milk in a separate bowl. Add oil and salt to the water mixture then add the dry ingredients. Mix (or knead by hand) until dough is smooth and firm. Coat the inside of a clean bowl with oil and lightly oil the dough as well. Cover with plastic wrap and let rise for an hour, until doubled in size. (I usually turn my oven on low (185 F) and sit the bowl on top of the stove for the added warmth.) Once dough has risen, punch down and knead for a few more minutes. Separate into two sections and lightly shape to fit the bread pans. Spray bread pans with non-stick spray, add dough, cover and let rise again for another 30 minutes, or until doubled in size again. (I set my oven timer for 15 minutes to remind myself to turn the oven on to 350 F since it takes about 15 minutes for it to heat to the appropriate temperature.) Once loaves have risen and oven is hot, place pans on top rack and bake for about 30 minutes. Remove cooked loaves and let sit/cool for about 5 minutes then remove from pans, otherwise they will start getting soggy from condensation. Enjoy a massive slice with copious amounts of butter...if you like butter :oD
