Cut peppers in half and take out seeds
Place peppers on a baking sheet.
Drain the oil from the mushrooms and drizzle 1 tablespoon over the peppers and season with s and p
Bake for 20-25’ until must tender
Tip couscous int a bowl and and pour over the hot broth, cover and leave to soak. Fluff up with a fork and stir in the mushrooms, halloumi and parsley. Season with s and pepper and spoon into the pepper halves.
Return to the oven for 15’ or until golden.
Serve with a mixed salad
