Beat together eggs and next 5 ingred. Slowly pour over bread. Sprinkle with remaining 3/4 c. cheese. Cover and chill overnight.
Preheat oven to 375?. Let strata stand at room remp for 30 min. Bake 30 min or until golden brown. Sprinkle with chives before serving.
