Preheat oven to 375 degrees.
Melt butter in a pan and add onions. Saute until soft. Allow to cool.
In a large bowl, whisk together eggs, half and half, salt and pepper.
Add ham. cheese, and onions to pie crust and pour egg mixture over, being sure to distribute evenly.
Bake on a baking sheet in oven for 40-45 minutes. Pull while still a little wobbly in the middle and allow to rest 10-15 minutes.
Pulling from the oven is the key to this recipe. Pull while set around the outside but still wobbly in the middle. Allow to rest a minimum of 10 minutes. And then try not to eat the whole thing in one meal.
