Place frozen hash browns in a microwave safe bowl and defrost at 30% for about 6 minutes. In a large skillet, cook onions and hash browns in just a little oil until they are warmed and slightly browned. Add garlic powder. Meanwhile, in a separate bowl, mix together ham, cheese and ranch dressing. On a cookie sheet, separate each can of roll dough into 4 rectangles and press the triangle perforations together so you have a total of 8 rectangles on your sheet. Place 1/4 cup ham mixture and 1/4 cup potato mixture on one end of each rectangle. Fold the dough over and seal the edges. Bake at 350 degrees for 15-18 minutes until golden brown. If you want to freeze them, let the pockets cool, then flash freeze them and store in individual bags in the freezer.
