Slightly spicy and hearty soup. Serve as a meal or as an addition.
Soak beans overnight or do the quick soak method - bring beans covered in water to a boil and let boil briskly for 2 minutes. Cover, turn off heat, and let soak for 2 hours. (some say 1 but 2 seemed good) Drain beans.
Put it all In a pot and cover, let simmer for 2 hours. (If sausage is pre-cooked, reserve until last 30 minutes so it doesn't dry out)
If you have a left over ham bone you could make stock by boiling it with onions, celery and such for a couple hours while beans soak. Strain to get out any bone bits and use in place of boxed broth.
Serve with grilled cheese sandwich for an easy, simple dinner.
Could add dried parsley, Worcestershire, garlic powder, dried mustard, paprika. (Didn't try but saw in recipes I reviewed before throwing this together.) I think parsley would help.
