I love cooking my ham in the Power Pressure Cooker XL! It is fast and easy with little clean up!
Trim fat from ham as needed.
Remove rack from cooker and place on large platter or plate with handles folded out. Place ham, cut side down, on rack. With a sharp knife, score top and sides of ham in a diamond pattern. Place slices of pineapple on ham and secure with toothpicks. (At this point you can add the cherries to the toothpicks as well but, I like to add them after cooking to preserve the color and shape for presentation.)
Glaze: (You can use any glaze, this is just the one I use.)
In a small mixing bowl, add the brown sugar, honey, dry mustard, cloves, and cinnamon; mix well. Drain the juice from the pineapple into a measuring cup. Add enough water to get 1 1/2 cups. Add this to the spices. Using the reserved juice from the cherries, add 1/4 cup cherry juice to the spice mixture; mix well.
Place rack with ham into cooker. Pour glaze over ham.
Cover and set vent to closed. Press Meat/Chicken and then press the Time Selector button to get a total of 40 minutes. When the ham is done, I like to let the pressure release naturally. Transfer the ham to a platter, let it stand for about 10 minutes before slicing.
