Line a baking sheet with parchment paper or silcone mat.
Place yeast in a large bowl in the standig mixer; Whisk in 1/2 cup of flour and warm water until. Let stand for 10 to 15 minutes.
Whisk 1 egg. melted butter, sugar and salt thoroughly into yeast mixture. Add remaining flour, about 3 cups.
Fit a dough hook onto standing mixer and knead the dough on low speed until soft and sticky, 5 to 6 minutes. scrape sides if needed. poke the dough with a silicone spatula, if large amounts of dough sticks to it, add alittle more flour.
Transfer dough onto a floured work surface. Dough should be sticky and elastic but should not stick to your fingers. Form the dough lightly into a round ball, tucking loosed ends underneath.
Wipe out bowl and oil bowl lightly. Roll dough around in oil, coating thinly with oil all over. Cover bowl and let rise until double in size, about 2 hours.
Transfer dough to a floured work surface and pat to flatten, shape into a rectangle about 5 x 10 inches and about 1/2 inch thick. Cut dough into 8 equal parts. Form each piece into a round shape.
Use your hands to gently pat and stretch the dough rounds into flat disc shapes about 1/2 inch thick. Arrange buns about 1/2 inchs apart on baking sheet. Dust buns very lightly with flour. Drape plastic wrap over buns (do not seal tightly). Let rise for about an hour again, or until doubled in size.
Preheat oven to 375.
Beat one egg with some milk and gently brush mixture over tops of buns being careful not to deflate them. Sprinkle on sesame seeds if desired.
Bake in oven until lightly browned on top, 15 to 17 minutes.
