Grind veggies and mix thoroughly in a large bowl. Place mixed veggies in a large pot and cover with salt; let stand at least 2 hours. Drain all liquid and taste. If too salty, rinse with water and drain. Add sugar, vinegar, celery seed, mustard seed and food coloring (according to desired color). Bring mixture to a boil and simmer for 10 minutes. Bottle in hot sterilized jars and process 10 minutes in a water bath.
Makes ten 500 ml jars
