3 day - mix and shape into rolls. Place on a broiler pan and bake at 160.
If using smoker, smoke at 160 degrees till internal temperature reaches 150 degrees. Mesquite or Alder works well.
Allow to cool and wrap in plastic wrap and or foil and freeze until needed
