Heat oil in dutch oven till it shimmers, add ground beef and saute till browned.
Add onion and saute 6-7 minutes til soft
Make a well in center and add garlic, saute 1 minute til fragrant
Add tomato paste and stir all
Add veggies ( except beans) then top with tomatoes, broth, Salt, pepper and herbs. Stir top with bay leaf
Bring to boil then reduce and simmer till potatoes are soft.
Add green beans and simmer till beans are cooked.
Could also use zucchini, corn, musrhooms etc.
