Suggest a better descriptionBroil, steam and peel long green chiles--either Big Jims for medium or Barkers for hot Cut the chiles into long strips, discarding seeds and stems. Cut the onion toward the root end and slice the pieces so they are more or less like strips. Heat the oil in a medium skillet. Add the onions. Cook over medium-high heat until lightly browned.
