Chop onion and carrots and garlic.
Carmelize over med-low heat.
Add coffee, thyme, cinnamon sticks, put allspice and coriander in tea-ball or sachet. Add vinegar. Simmer over low heat ~45 minutes.
Remove cinnamon sticks and spices.
Blend with immersion blender until smooth.
Add apple sauce, sorghum/molasses and brown sugar. Simmer ~30 minutes, taste.
Add more brown sugar if necessary, add peppers, simmer ~30 minutes.
Blend with immersion blender until smooth. Test pH and add vinegar as needed.
Bring to boil. Bottle immediately.
