1. In a large skillet melt the butter over medium heat. Add the onions, thyme and salt and pepper.
2. Cook, partially covered, stirring occasionally, until onions are soft and a light caramel color, about 20-25 minutes.
3. Add the wine and cook 1 minute.
4. Add the stock and bring to a boil. Cook 1 minute, then remove from heat and add sour cream.
Steak:
1. Heat cast iron skillet over medium high heat.
2. Coat steaks with olive oil and then season with Herbs de Provence.
3. Rub skillet with paper towel coated in Olive oil and add steaks.
4. Cook 4 min per side for Med rare.
Let rest for 5 min. Slice against the grain and top with onion sauce.
